My corned silverside recipe:
Cover Silverside with water and add:
Ingredients:
1 piece corned silverside
4 bay leaves
6 cloves
teaspoon black peppercorns
half an orange (halved again)
couple of tablespoons of malt vinegar
1 medium onion quartered (leave skin on)
1 tablespoon of golden syrup/brown sugar
sprig of parsley
Directions:
I cook covered on high for about 5 hours ( I don’t like my corned beef falling apart – if you do, cook longer)
its awesome served with a really cheesy broccoli and cauliflower in sauce, with carrots cooked in the meat
**Store any leftover corned beef in a container covered in the cooking water in the fridge..bet there wont be any tho )))
Question: Can I have your recipe for the cheese sauce please.
Answer: The recipe for the cheese sauce is a mystery as I don’t follow one, typical male I suppose…but here goes:
I melt a hunk of butter 100-150gm in a pot. then add about 3 tablespoons of flour and stir till cooked a bit and thick..
I take off the heat and add a cup of milk…stirring until it starts to thicken and becomes smooth. then back on the heat and slowly adding more milk and stirring all the time until I get a potful of white sauce. I then get the tastiest cheese I can find – Coles shredded parmesan is always in my freezer so I add a couple of cups of this, then I grate another couple of cups of Coles Vintage Cheddar the add a good shake (2-3 Tablespoons) of Kraft grated parmesan. the one that smells bad. I can assure you it boosts the cheese flavour considerably. stir well and continue to cook until thick and smooth, a little salt at this point can help boost the flavour too if the cheese you use does not have the requires flavour…pour over some blanched/partially cooked Cauliflower or Broccoli or both. then cover in grated cheese and and baked in a hot oven uncovered until the top browns nicely….I like don’t like my Cauliflower or Broccoli over cooked and prefer it a little crunchy still. there it is..
