Chilli con Carne, adjusted a well loved recipe for my slow cooker .
Ingredients:
1 Tbs olive oil
750g mince steak
1 large onion
2 med red peppers
2 tsp minced garlic
1 heaped tsp hot chilli powder
1 tsp paprika
1 tsp cumin
1/2 tsp dried marjoram
1 tsp sugar
2 oxo cubes – 300ml water
2 tbs tomato purée
1 400g tin chopped tomatoes
1 415g tin of baked beans ( Heinz) I use the no added sugar tin
Salt / pepper
Directions:
Heat oil , fry onion and garlic for a few minutes
Add all spices except marjoram and sugar , fry for a minute
Add to slow cooker
Add meat to same pan fry and break up lumps until no pink bits
( I then drain the excess water from the meat )
Add to slow cooker with the rest of ingredients and stir
Cook on low for 6 hours.
I will thicken up with a little cornflour if required.
