Chicken & Bacon Cob Loaf
Tried our much loved cob loaf recipe in the slow cooker instead of the oven and OMG the result was yummy After searching two stores for a cob loaf late on a Saturday afternoon I had to improvise and use a tiger Vienna loaf instead (which I’ve had to do many times before  A home baked loaf of your fave bread works great too.

INGREDIENTS:

1 Vienna or Cob loaf
2 TBS butter
1 brown onion, diced
150gm bacon, diced
Cracked black pepper
2 tsp chives
250gm philly cream cheese, at room temp
300gm sour cream
At least 1/2 a roast chicken
1 cup grated cheese, before slow cooking (reserving 1/4 to top cob loaf)

METHOD :

Line a 7lt slow cooker with baking paper. Evenly slice off the top crust of the bread loaf and then continue to hollow out cob or vienna loaf being sure not to pierce the crust. Chop or tear hollowed out bread and crust and set aside in bread bag.
In a med to large saucepan over low to med heat, sauté diced onion with butter, add diced bacon & a little cracked pepper then continue to sauté over medium heat and add chives. Add chopped cream cheese then sour cream & stir regularly (to prevent burning on the bottom of saucepan) add chicken & grated cheese and mix well. Once mixture is combined, pour into hollowed out loaf & arrange reserved bread pieces around the edge of the loaf. Top with remaining cheese & cook on high with a tea towel under the lid for 1.5 to 2 hours depending on slow cooker used. Enjoy
