Ingredients
For the base:
- 4 beef or pork hot dogs, sliced into small rounds
- 2 cans baked beans or navy beans (15 oz each)
- 1 tablespoon butter or cooking oil
- 1 small onion, finely chopped
- 2 garlic cloves, minced
For the sauce:
- 2 tablespoons ketchup
- 1 tablespoon brown sugar
- 1 tablespoon mustard (yellow or Dijon)
- 1 teaspoon Worcestershire sauce
- ½ teaspoon smoked paprika
- ½ teaspoon black pepper
- Salt to taste
- ¼ cup water or beef broth
Beanie Weenies: Directions
- Cook the sausage slices: Place a medium pan over medium heat. Add the butter or oil. Once it is hot, drop in the sliced hot dogs. Let them cook for about 3 to 4 minutes, stirring now and then, until the edges get a little golden and slightly crispy. Take them out and set them aside on a plate.
- Soften the onion and garlic: In the same pan, add the chopped onion. Cook for 3 minutes until it turns soft and a little see-through. Add the minced garlic and stir for another 30 seconds until it smells good.
- Mix in the sauce: Pour in the ketchup, brown sugar, mustard, Worcestershire sauce, smoked paprika, and black pepper. Stir everything together so the onion gets fully coated in the sauce. Let it cook for 1 minute so the flavors blend together nicely.
- Add the beans: Open your cans of beans and pour them straight into the pan, liquid and all. Add the water or beef broth. Stir well so everything mixes together. Turn the heat down to low and let it all simmer gently for about 8 to 10 minutes. The sauce will get thicker and richer as it cooks.
- Put the sausages back in: Drop the cooked sausage slices back into the pan. Stir them into the beans and let everything cook together for another 3 to 5 minutes so the sausages soak up all that tasty sauce.
- Taste it and change the flavor if needed. Add a pinch of salt or a tiny bit more sugar if you like it sweeter. Add a dash more paprika if you want a little more smoky flavor.
- Serve: Spoon the Beanie Weenies into bowls. Serve them on their own, over white rice, with buttered toast, or alongside crusty bread. Top with a small handful of shredded cheddar cheese if you like!
Serving suggestions: Great with cornbread, steamed rice, or a simple green salad on the side.
