BBQ Pork Trick for Spring Slow Cooker 3-Ingredient — Foil-Wrapped

My uncle loves this super simple trick for the first warm days in April. Just 3 things wrapped tight in foil so the pork gets yummy and soft on its own.

Makes: 4 servings

What You Need

  • 4 big pork chops with bones (1 to 1¼ inches thick, about 7-8 oz each)

  • 1½ cups thick smoky BBQ sauce (a bit more for extra if you want)

  • 1 big yellow onion, cut into thin slices

How to Make BBQ Pork Trick for Spring

Step 1: Make Foil Boats
Rip 4 big sheets of strong foil, each 12-14 inches long. Fold up the sides like little boats with rims. Pinch corners tight so no juice leaks. Fit all 4 boats flat in your slow cooker. They can overlap a tiny bit.

Step 2: Add Onions
Split the onion slices into 4 parts. Put some in the middle of each boat. This makes the pork tasty and stops it from sticking.

Step 3: Put On Pork and Sauce
Dry the pork chops with a paper towel. If your sauce isn’t salty, add a tiny pinch of salt and pepper on both sides (but you don’t have to). Put 1 chop on the onions in each boat. Spoon ⅓ to ½ cup BBQ sauce on top and sides of each. Spread it good with the spoon so the pork is covered nice.

Step 4: Seal Tight
Fold the long sides of foil up over the pork and crimp them shut tight. Fold the short ends in and pinch closed. No big holes! This keeps steam and juices inside to make pork super juicy.

Step 5: Cook
Put the lid on the slow cooker. Cook it on low heat for 6-7 hrs or high heat for 3-4 hrs. Pork is done when it hits 145°F inside with a thermometer or feels soft when poked.

Step 6: Serve
Carefully open the foil (watch for hot steam!). Scoop pork onto plates with onions and yummy juices. Add more BBQ sauce if you like. Eat right from foil or with sides like potatoes. Hot and ready!
