Slow Cooker BANGING BEEF CURRY
Ingredients:
1kg Lean diced beef
1Tbspn Coconut oil
30grm Crushed Garlic
30grm Crushed Ginger
2 Large Purple Onions, halved n sliced
400ml Coconut milk (not light)
50grm Tomato Puree/ or paste
2Tbspn Plain Flour
2tspn Garam Masala
2Tbspn Curry Powder
Directions:
* Heat coconut oil in frying pan/sauce pan, and fry ginger, onions & garlic for few minutes.
* Stir in Tomato Puree, garam masala & curry powder n cook for a further minute.
*Add beef n cook for further few minutes until it’s coated with the paste and starting to brown then tip into slow cooker (I always like to preheat mine whilst prepping any meal).
* Add flour to slow cooker and mix it through then pour in coconut milk.
*Cover with lid, cook on High 3-4hrs, on Low 6-8hrs. Serves 4
