3 pounds pork loin or shoulder, cut into 1-inch chunks

2 cups apricot jam (one big jar)

1 cup sweet chili sauce (like ketchup, not hot stuff)
Apricot Pork Bites: Steps

Trim extra fat from pork. Cut into small 1-inch pieces so they cook the same.

Spray a 4-6 quart slow cooker with no-stick spray or use a liner bag.

Mix apricot jam and sweet chili sauce in a bowl until smooth orange—no lumps!

Put pork in cooker. Pour sauce on top. Stir to coat every piece.

Cover with lid. Cook it on low heat for 4-5 hrs or high heat for 2-3 hrs. Pork should be soft and reach 145°F inside.

Stir when done. If sauce is thin, cook lid-off on high 15-30 minutes until thick and sticky. Stir a little.
