Crock Pot Amish Stuffing Pork Chops
Servings: 4
Ingredients
- 4 boneless pork chops, about 1 inch thick
- 1 box (6 ounces) dry herb-seasoned stuffing mix
- 1 can (10.5 ounces) cream of chicken soup or cream of mushroom soup, not mixed with water
Directions
- Coat the inside of your slow cooker with cooking spray so the food won’t stick.
- This helps the food come out easily and makes cleanup much simpler.
- Place the pork chops on the bottom of the slow cooker in one layer. A little overlap on the edges is fine, but lay them as flat as you can so they all cook at the same speed
- Tip the dry stuffing mix into a bowl. Add the can of soup and stir until everything is mixed well. Do not add any water or broth. The soup and the juices from the pork will make the stuffing soft and moist.
- Scoop the stuffing mixture over the pork chops. Spread it out all the way to the edges so every chop is fully covered. This keeps the meat juicy while the top turns fluffy and a little crispy around the sides.
- Cook it on low heat for 5 to 6 hours, or on high heat for about 2½ to 3 hours.Put the lid on the slow cooker. The pork is done when it is soft and the inside reaches at least 145°F on a meat thermometer.
- Check the stuffing. It should look moist and fluffy, with golden, slightly crispy edges along the sides of the pot.
- Turn off the slow cooker and let the food sit for about 5 minutes. This gives the juices time to settle.
- Use a spatula to lift each pork chop out gently. Spoon a big helping of stuffing on top, and serve it hot while it is still steamy.
Serving Ideas
Serve the pork chops right from the slow cooker, with the fluffy stuffing spooned over the top. Steamed green beans, roasted carrots, or a quick bagged salad make easy side dishes. Mashed potatoes or buttered egg noodles are great for soaking up the extra creamy sauce.
If you are feeding a crowd, warm up some frozen dinner rolls or slice a loaf of crusty bread so everyone can wipe up the juices. A crunchy apple salad or coleslaw adds a fresh bite that goes nicely with the cozy, savory flavors.
