Using cubed Marcy potatoes makes the prep work really easy, while bacon and ranch seasoning add smoky, tasty flavor without much effort at all. Cooking it low and slow for a long time gives the soup its smooth, velvety texture, making it a great choice for cool October get-togethers, game days, and church suppers.
Serve this soup with warm dinner rolls, oyster crackers, or a crisp green salad to balance out its rich taste. For a potluck table, it goes nicely with baked ham, roast chicken, or a simple veggie tray. You can also set out extra bacon, shredded cheddar cheese, or sliced green onions so everyone can top their bowl just the way they like it.
Slow Cooker Potluck Smoky Bacon Ranch Potato Soup
Servings: 8
Ingredients
- 2 pounds cubed Marcy potatoes
- 1 packet ranch seasoning mix (about 1 ounce)
- 8 slices bacon, cooked and crumbled
- 4 cups chicken broth
- 8 ounces cream cheese, cubed
Directions
- Add the cubed Marcy potatoes into the slow cooker. Sprinkle the ranch seasoning mix evenly over the potatoes. Add in half of the crumbled bacon, saving the rest for later. Pour the chicken broth over everything so the potatoes are mostly covered.
- Put the lid on the slow cooker. Cook it on LOW flame about 6 to 7 hrs, or on HIGH heat for 3 to 4 hurs. The potatoes are ready when they feel very soft and can be mashed easily with a spoon.
- Once the potatoes are soft, add the cubed cream cheese into the slow cooker. Use a potato masher or a large spoon to mash some of the potatoes right in the pot. Leave a few chunks of potato for a nice texture. Keep stirring until the cream cheese melts all the way and the soup turns smooth and creamy.
- Taste the soup. If it looks too thick, stir in a little hot water or extra chicken broth until it reaches the thickness you like. Scoop the soup into bowls or serve it straight from the slow cooker. Sprinkle the rest of the crumbled bacon on top before serving.
