Ingredients

  • 3 to 4 pounds Pike’s Peak roast
  • 1 packet onion soup mix
  • 1 cup beef broth
  • 1 cup barbecue sauce

Slow Cooker Shredded Pike’s Peak Roast: Directions

  1. Add the roast. Place the whole Pike’s Peak roast into the bottom of a large oval slow cooker. Try to set it flat so it cooks evenly on all sides.
  2. Add the seasonings and liquid. Sprinkle the dry onion soup mix all over the top of the roast so it covers most of the meat. Next, slowly pour the beef broth and barbecue sauce around the sides and over the top of the roast, making sure some liquid pools at the bottom of the slow cooker.

  4. Shred the beef. Using two forks, pull the beef apart right inside the slow cooker, breaking it into thin shredded pieces. Once shredded, stir the meat back into the tasty cooking juices so every bite soaks up plenty of flavor and stays nice and moist.
  5. Serve it up. Spoon the hot, saucy beef onto soft buns, over creamy mashed potatoes, or any way your family or friends like it best. Serve right away while it’s warm and juicy.
