Poor Man Independence Bake. This slow cooker independence bake is a simple, budget-friendly dinner made with ground beef, potatoes, and green beans in a creamy gravy. It’s an easy, cozy meal that cooks itself low and slow, giving you a hearty dinner without much work at all.

This slow cooker poor man independence bake is a cheap, easy dinner that fits perfectly into a busy family’s week. It only needs a few simple foods you probably already have, and it uses jarred beef gravy to make the flavor easy without much work. It cooks low and slow, turning into a warm, filling meal that tastes way fancier than it really is to make.

Serve this dish over mashed potatoes, cooked egg noodles, or steamed rice so you have something soft underneath to soak up all that tasty gravy. You can also add a side of green beans, buttery corn, or a simple salad to go with it. Warm dinner rolls make the meal feel extra cozy on a cold night.

Servings: 6

Ingredients

  • 1 pound ground beef chub
  • 1 jar (12 ounces) beef gravy
  • 1 can of cream of mushroom soup (about 10.5 ounces)
  • 1 small yellow onion, thinly sliced
  • 3 medium russet potatoes, peeled and thinly sliced
  • 1 can of cut green beans, with the liquid drained out

Poor Man Independence Bake: Directions

  1. Spray or rub a bit of oil inside the slow cooker so nothing sticks to it. Lay the sliced potatoes flat and even across the bottom. Then sprinkle the sliced onion and drained green beans on top of the potatoes.
  2. Take the raw ground beef chub and place it whole, right in the middle of the slow cooker, on top of the vegetables.
  3. Spoon the mushroom soup over the top of the beef. Then slowly pour the beef gravy over the entire mixture, trying to cover everything evenly.
    1. Put the lid on and cook it on LOW flame for 6 to 7 hours, or on HIGH heat for 3 to 4 hours. It’s ready when the potatoes feel soft and the beef is fully cooked with no pink left.
  4. Use a big spoon to break the cooked beef apart into small, hearty chunks. Stir everything gently so the gravy covers the potatoes and vegetables evenly. Serve while it’s still hot.
