This simple slow-cooker meal layers juicy chicken over tender potatoes, topped with crispy bacon and ranch seasoning. Everything cooks together low and slow, then gets stirred up with melty cheese and cool sour cream for a warm, creamy dinner the whole family will love.
Ingredients
- 2 lbs chicken breasts
- 1 lb baby potatoes, cut in half
- 1 packet ranch seasoning
- 8 slices bacon
- 1 cup shredded cheddar cheese
- ½ cup sour cream
- ½ tsp black pepper
Bacon-Covered Chicken & Potatoes: Directions
- Place the halved baby potatoes flat on the bottom of your crockpot.
- Lay the chicken breasts right on top of the potatoes.
- Shake the ranch seasoning and black pepper all over the chicken and potatoes.
- Place the bacon strips across the top of the chicken so it is fully covered.
- Put the lid on your crockpot and cook on LOW for 6 to 7 hours.
- Pull the bacon out, break it into small pieces, and toss it back into the crockpot.
- Add the sour cream and shredded cheddar cheese and stir everything together until it gets thick and creamy.
- Serve it up warm and dig in!
