These Southern 3-ingredient bacon-wrapped tater bites are my secret party trick. The first time I made them, my husband asked me to make more because the first pan vanished before we left the house. They are salty, smoky, a little sweet, and crispy outside with soft potatoes inside — the best tiny snack ever.
These easy bacon-wrapped tater bites use frozen tater tots, bacon, and brown sugar. They bake until the bacon is crisp and the sugar makes a sticky glaze. Perfect for parties, game days, or quick snacks, they’re simple to make and taste amazing with ranch, BBQ sauce, or spicy mayo.

1 (32 oz) bag frozen tater tots

1 lb thin-cut bacon (about 12 slices)

1 cup packed brown sugar
Bacon-Wrapped Tater Bites: Directions

Preheat the oven to 400°F (200°C). Line a large rimmed baking sheet with aluminum foil and lightly spray or oil it so the bites won’t stick.

Cut each bacon slice into 3 equal pieces so each piece wraps once around a tater tot (cut into 4 pieces only if your bacon is very long).

Put the brown sugar in a shallow bowl and break up any clumps with your fingers or a fork.

Take one frozen tater tot and place it at the end of a bacon piece. Wrap the bacon around the tot, letting the ends cover each other a little. Press the seam so it holds.

Roll the bacon-wrapped tot in the brown sugar, pressing lightly so the sugar sticks all over.

Set the coated bite seam-side down on the prepared baking sheet. Repeat with the rest, spacing them a little apart. Add toothpicks now if you want.

Bake on the middle oven rack for 20–25 minutes, until the bacon looks mostly cooked and the sugar starts to bubble.

Carefully flip each bite with tongs or a spatula so the other side can crisp. Bake 10–15 more minutes until the bacon is deep golden and crispy. Total bake time is about 30–40 minutes.

Take the tray out and let the bites rest 5 minutes. The glaze will cool and thicken a bit.

Insert toothpicks if you didn’t earlier, spoon any extra glaze from the foil over the bites, and serve warm.
