  1. Place the raw bratwurst sausages in a single layer at the bottom of a large slow cooker. A few can overlap a little, but try to keep them mostly in one layer.

  2. Scatter the sliced onions over and around the brats so some onions fall between the links.

  3. In a medium bowl or measuring cup, whisk the beer, mustard, and brown sugar until the sugar mostly dissolves and the mix looks even.

  4. Pour the beer mix over the brats and onions so the links are mostly covered. Press the onions down into the liquid if needed.

  5. Cover the slow cooker. Cook on LOW for 6 to 7 hours, or on HIGH for 3 to 4 hours, until brats are fully cooked and onions are very soft. The brats should reach at least 160°F (71°C) inside.

  6. You can serve the brats right from the slow cooker with the onions and juices, or finish them on a hot grill or under a broiler for 3 to 5 minutes, turning once, until they get a little color and snap.
