Ingredients

  • 3 to 4 pounds corned beef brisket with spice packet, rinsed and dried off

  • 1 cup balsamic vinegar

  • 1/2 cup packed brown sugar (light or dark works)

  • 1/2 cup low-salt beef broth or water

Tender Balsamic Corned Beef: Directions

  1. Put the corned beef in the slow cooker, fat side up. Throw out the spice packet or save it—you don’t need it here.

  2. In a small bowl, mix balsamic vinegar, brown sugar, and broth (or water) until sugar melts mostly.

  3. Pour the mix over the meat. It should have a little liquid around it—not all covered.

  4. Put on the lid. Cook on LOW 8-10 hours or HIGH 4-5 hours, until meat is soft and shreds easy with a fork.

  5. Move meat to a board. Let extra juice drip back in cooker. Cover with foil to rest.

  6. Scoop off fat from cooker juice. For thicker sauce, cook on HIGH 15-20 minutes without lid, or boil in a pot on stove till shiny.

  7. Cut meat against the grain into thick pieces, or pull into big soft chunks. Put back in cooker and spoon juice over it.

  8. Serve warm from cooker with lots of that yummy dark sauce on top.

Serve sliced or pulled meat with its tasty juices poured over. It’s great on mashed potatoes, noodles, or rice to grab the sauce. Add green veggies like beans, cabbage, or salad. For fun, make sandwiches in rolls with extra sauce, pickles, or slaw.
