Ingredients

  • 2 pounds beef sirloin tips, chopped into 1- to 1 1/2-inch pieces, with extra fat cut off

  • 1 cup (2 sticks / 16 tablespoons) unsalted butter, chopped into bits

  • 6 garlic cloves, chopped small (about 2 tablespoons)

  • 1 1/2 teaspoons kosher salt (or 1 teaspoon table salt), plus extra if needed

Garlic Butter Sirloin Tips: Directions

  1. Dry the beef pieces with paper towels so they soak up taste well. Cut away the big pieces of fat, but leave a little so it stays soft.

  2. Put beef in a flat layer at the bottom of a 4- to 6-quart slow cooker. A little overlap is fine, but don’t stack too high for even cooking.

  3. Shake salt evenly over the beef. Mix gently with hands or a spoon to cover all sides.

  4. In a small bowl safe for microwave or a pan, melt butter softly until it’s mostly liquid. Small lumps are okay—no boiling!

  5. Mix chopped garlic into the warm butter. This wakes up the yummy smell to flavor the meat.

  6. Pour butter mix over beef evenly. Spread garlic bits all around, not just on top.

  7. Put on the lid. Cook on LOW 4 to 5 hours until beef is soft when poked with a fork. Don’t peek early to keep heat in.

  8. Stir gently to cover beef in sauce. Taste and add salt if you want more.

  9. Serve hot with sauce and juices spooned over beef and sides. Look for shiny, tender chunks with garlic specks!

Tip: Chop beef the night before, keep in fridge. Add to cooker in morning with butter mix and go!
