2 to 2½ pounds chicken thighs (no bones or skin, trim fat)

½ cup honey

½ cup Dijon mustard

2 tablespoons soy sauce
Directions: Quick Honey Mustard Chicken
- Put chicken thighs flat in a 4- to 6-quart slow cooker. They can overlap a bit, but keep them even for juicy cooking.
- In a bowl, stir honey, mustard, and soy sauce until smooth and shiny. That’s your magic sauce!
- Pour it all over the chicken. Spoon some under and around so every piece gets covered.
- Put the lid on. Cook it on LOW heat for 4-5 hours or HIGH heat for 2-3 hours. Chicken should be soft and hit 165°F inside. Sauce bubbles and gets sticky with brown edges.
- Stir chicken to coat in thick sauce. If too runny, cook on HIGH lid-off for 15-20 minutes more, stirring now and then, till it’s glossy.
- Taste sauce. Add honey if sweeter needed, or mustard for zing. Serve hot from cooker with lots of glaze on top!
- Pair with mashed potatoes, noodles, rice, green beans, peas, salad, or bread to sop up sauce.
