Slow Cooker Cacciatore Chicken. This is a warm and simple chicken dinner. The chicken cooks slowly with tomatoes and vegetables. The sauce becomes rich and tasty. It is great to serve with rice or pasta.
Ingredients

6 bone-in and skin-on chicken thighs.

Salt and pepper, to taste

1 tablespoon olive oil

1 large onion, sliced

1 bell pepper, any color, sliced

2 cloves garlic, minced
-
1 can (28 oz) crushed tomatoes
-
1/2 cup chicken broth
-
1 teaspoon dried oregano
-
1 teaspoon dried basil
-
1/2 teaspoon dried thyme
-
1/4 teaspoon red pepper flakes, optional.

1 cup sliced mushrooms
Garnish

1/4 cup chopped fresh parsley.
Slow Cooker Cacciatore Chicken: Directions

Season the chicken thighs using salt and pepper.

Heat the olive oil in a large skillet on high-middle heat. Roast the chicken thighs, on either side, approximately four minutes each side.

Add the thinly cut onion, bell pepper and minced garlic at the base of the slow cooker.

Place the already browned chicken thighs over the vegetables.

Add the tomatoes and chicken broth that have been crushed.

The dried oregano, basil, thyme and red pepper flakes (as needed) should be added.

Add and stir to mix then cover and cook over low heat in 6-7 hours or until the chicken is tender.

Add the sliced mushrooms some 30 minutes before service.

Serve with fresh parsley in it.
