Ingredients

  • 1/2 pound beef round, in very thin slices.

  • 12 ounces dry gemelli pasta

  • 1 (12-ounce) jar red pepper, roasted and drained.

  • 4 ounces goat cheese, softened

  • 2 cups low-sodium beef stock

  • 3 tablespoons balsamic glaze

  • 4 cloves garlic, minced

  • 1 teaspoon kosher salt, and more to taste.

  • 1/2 teaspoon black pepper

  • 1 teaspoon Italian seasoning (dried basil and oregano)

  • 1 tablespoon olive oil (not necessary, to make the sauce richer)

  • 1/4 cup grated Parmesan cheese (serving, optional)

  • 2 tablespoons fresh parsley (serving optional) chopped.

Creamy Roasted Beef: Directions

  1. Put the raw beef round strips in a 5- to 6-quart slow cooker, in a single layer on the bottom. Uniformly sprinkle the dry gemelli pasta on top of the beef and allow it to fall down among the meat pieces in order to have everything nestled together.

  2. Put roasted red peppers, goat cheese, beef stock, balsamic glaze, minced garlic, kosher salt, black pepper, dried Italian seasoning, and olive oil in the blender or food processor just in case.
