Ingredients

  • 1 1/2 pounds ground beef (80-90% lean, raw)

  • 4 cups of low sodium chicken broth

  • 1 (10.5-ounce) condensed cream of potato soup

  • 1 can (10.5-ounces) condensed cheddar cheese soup

  • 1 cup sharp or mild cheddar cheese (packed) shredded cheese

Amish Cheeseburger Soup: Instructions

  1. Put the raw ground beef at the bottom of a slow cooker of 5 to 6 quarts. Lightly split it with a spoon, or with your hands, into big pieces in order that it may cook, though the need to break it in pieces at all is unnecessary.

  2. Add the chicken broth- pour the soup into the slow cooker and ensure that all parts of the meat are covered. It is the foundation on which the beef will cook softly and become a tasty soup.

  3. Combine the condensed cream of potato soup and condensed cheddar cheese soup with the slow cooker. The soups must not be diluted with water. Gently stir so as to blend together the soups and broth with the beef but leave the meat in small pieces.

  4. Cook or cover with a lid on the LOW 6 or 7 hours or on the HIGH 3 or 4 hours, until the ground beef is completely cooked through and falls apart at a stir. Midway through the cooking, stir the soup in a quick way so that the beef can be fully broken up, and to ensure that all is cooking at an even rate.

  5. As soon as the beef is cooked and the soup appears thick and creamy add the shredded cheddar cheese one handful after another until melted and smooth. Season and add salt and black pepper to taste (the canned soups and cheese are already salty, so taste it first).

  6. Pour the hot cheeseburger soup into bowls and eat it. To decorate each bowl, add some shredded cheese, sliced green onions, or pickle slices on top so it looks like a cheeseburger. Best texture is upon serving.
