Slow Cooker 5-Ingredient Lemon Garlic Chicken Packets. These chicken packets are simple and tasty. They cook slowly and stay juicy. The lemon and garlic give fresh flavor. It only needs a few ingredients and makes an easy dinner.

Ingredients

  • 4 chicken breasts (all of them skinless and boneless, approximately 2 pounds)

  • Unsalted butter 4 tablespoons, divided.

  • 1 teaspoon Garlic powder or 4 cloves Garlic, minced

  • 2 medium lemons, sliced thinly (and 1 tablespoon lemon juice, optional)

  • 1 1/2 teaspoons salt

  • 1/2 teaspoon black pepper

  • Packaging foil made of heavy-duty aluminum.

Lemon Garlic Chicken Packets: Instructions

  1. Ready the foil: Cut 4 big pieces of heavy-duty aluminum foil, each approximately 12-14 inches in length. Crimp the edges to a slight degree to ensure that the juices do not escape when you fold them in packets.

  2. Season the chicken: Wipe the chicken breasts dry using paper towels. Evenly sprinkle the two sides of the breasts with the salt and black pepper. In case of the garlic powder replacing the fresh garlic, sprinkle it over the chicken at this stage too.

  3. Prepare the packets: Put one chicken breast that is seasoned in the middle of every foil sheet. On each chicken portion, put 1 tablespoon of butter (you may cut it in a few small pieces so it will melt completely). In the case of fresh minced garlic, cut it into even portions and sprinkle it all over the chicken breasts. Place lemon slices over each chicken breast, and in case you are in the mood to be a bit more sunny, drizzle lemon juice over each breast, approximately a teaspoon.

  4. Close packets: Fold the foil sheets long sides up and over the chicken and then fold downwards, and then bring the short sides to close the packets entirely. You do not want any packets leaking, and you want the steam and juices to be inside and slow cooker to remain clean.

  5. Prepare in the slow cooker: Put the foil packets with their seams facing upwards in the bowl of your slow cooker. It is all right that they may touch slightly or even lean on each other provided that all of them are closed. Cover the lid with the slow cooker.

  6. Cook: Cook on LOW 3 1/2 to 4 1/2 hours, or until chicken is cooked and the inside temperature has reached 165 Degree F. This will also depend on the thickness of your chicken breasts and your model of a slow cooker. Do not keep lifting the lid regularly in order to retain the heat and moisture.

  7. Uncover and rest: Unless the slow cooker is turned off, the packets will rest about 5 minutes. Gently wipe every foil packet with tongs onto a plate/baking sheet. You need to open each packet gradually and not on your face since the steam captured is very hot.

  8. Serve: Spoon some buttery lemon garlic juices of each packet over the chicken and serve. Top with the slices of lemon cooked (you may add fresh slices of lemon too). Present the chicken in the open packets and serve without a plate and pour the juices over the top, or place the chicken on the plate and pour the juices over the top.
