Ingredients For Making Creamy Chicken Noodle Soup

  • Chicken

    • Quantity: 2 lbs chicken boneless, skinless chicken breasts or thighs.

  • Onion

    • Quantity: 1 small onion, diced

  • Carrots

    • Quantity: 2 carrots, sliced

  • Celery

    • Quantity: 2 celery stalks, diced

  • Peas

    • Quantity: 1 cup frozen peas

  • Garlic

    • Quantity: 3 cloves garlic, minced

  • Chicken broth

    • Quantity: 4 cups chicken broth

  • Water

    • Quantity: 2 cups water

  • Salt

    • Quantity: 1 tsp salt

  • Black pepper

    • Quantity: 1/2 tsp black pepper

  • Dried thyme

    • Quantity: 1 tsp dried thyme

  • Dried parsley

    • Quantity: 1/2 tsp dried parsley

For Making Creamy Chicken Noodle Soup Extra Creaminess

  • Cream

    • Quantity: 1 cup of cream, heavy or half-and-half (or substitutes such as almond, soy, or coconut milk)

  • Butter

    • Quantity: 2 tbsp butter

  • Flour

    • Quantity: 2 tbsp flour (for thickening)

Pasta:

  • Tomatoes

    • Quantity: 1 cup red tomatoes (peeled and sliced into 1/2 inch round slices)

  • Onions

    • Quantity: onions (diced into similar-sized round pieces)

Instructions

Slow Cooker Method:

  • Add to slow cooker:

    • Chicken

    • Onion, carrots, celery

    • Garlic

    • Broth + water

    • Salt, pepper, thyme, parsley

  • Cook:

    • LOW: 6 hours

    • HIGH: 3-4 hours

  • Take out chicken, shred, and put it back into the pot.

  • Melt butter in small pan and add flour and cook one minute.
    Add 1 cup of hot broth in the slow cooker gradually until smooth paste is achieved.
    Stir mixture back into soup.

  • Add pasta and peas. After that, cook 20-30 minutes until pasta is tender.

  • Stir in heavy cream. Let heat through 5 minutes.

Stovetop Method For Making Creamy Chicken Noodle Soup

  • Saute onion, carrots and celery in butter in a large pot 3-4 minutes.

  • Add garlic and cook 30 seconds.

  • Add seasonings, broth, and chicken. Simmer 20 minutes.

  • Take off chicken, shred, put back into pot.

  • Add pasta and cook 10 minutes.

  • Stir in cream and serve.
