Slow Cooker Tomato Parmesan Pot Roast. Cooked this in the slow cooker a while ago and thought I would share. Bloody easy and top notch Here’s the recipe if anyone wants to have a crack!!
Ingredients:
2-pound chuck roast
1½ teaspoons salt
½ teaspoon pepper
1 cup grated Parmesan cheese
½ cup finely chopped sun-dried tomatoes
2 teaspoons fresh rosemary, finely chopped
2 tablespoons minced garlic
Directions:
Place roast in a 6-quart slow cooker. Season evenly with salt & pepper.
In a bowl, sun-dried tomatoes, combine Parmesan cheese, garlic & rosemary.
Sprinkle Parmesan mixture evenly on roast, pressing into the meat to create a crust.
Cover and cook on high for 4 hours or 8 hours on low.
Remove the pot from the slow cooker base, remove lid and allow roast to rest for 10 to 15 minutes before slicing.
