Easy peasy baby food bubs loves! Got 12 dinners out of this pot usually do once every 2-3 weeks as bubs doesn’t really like anything else!
Ingredients:
2 small chicken breasts
1/4 butternut pumpkin
Medium size sweet potato
Small head of broccoli
1 large carrot
1 1/2 cobs of sweet corn
2 cups of rice
1/3 leek
Handful of grated cheese
Approx 8 cups water
Directions:
Put the rice into the slow cooker
Add the chopped up carrot, pumpkin and potato
Add the water (usually just eyeball the level to just above the vegetables)
Place some butter in a fry pan and add the leek until soft
Brown the chicken in the same pan (not cooking just sealing)
Place the leek and browned chicken on top of the veggies and place the lid on
Turn the slow cooker on low for 3 hrs.
At 3 hours add the corn and broccoli place the lid on (add more water if you feel it is needed)
After an hour mix the pot around to avoid the rice sticking (add more water if you feel it is needed)
After another 2 hours check and ensure looking good and soft if it is ready place a handful of grated cheese on top and let melt for a few minutes (sometimes I have added sour cream)
Once melted I then use a stick mixer to wiz it up for baby food (she is 11 months now so I leave some chunks for her).
I make one bowl for tonight and 2 for the next two nights with cling wrap over and in the fridge and then put the rest in the freezer!
