Fried rice
(done in the secretchef slow cooker)
Ingredients:
For the rice:
2 cups uncooked rice
3 tbsp butter
2 cups reduce salt chicken stock
Ingredients:
100g Bbq pork, finely sliced
2 bacon rashes, finely sliced
1/2 cup shredded ham
1 cup frozen peas, corn, capsicum
1/3 cup red capsicum, finely diced
1 onion, finely diced
2 garlic cloves, finely chopped
1/2 tsp ginger, minced
5 eggs, lightly beaten
2 spring onions, finely sliced
2 tbsp butter
Good pinch of salt & black/white pepper
Sauce: mix together
1 tbsp oyster sauce
2 tbsp soy sauce
1 tsp sesame oil
Directions:
Heat slow cooker to sear mode or pan.
Add 2 tablespoon butter, then add onion, capsicum, frozen vegetables, garlic and ginger. Cook for 2 mins add meats, cook for another 3 mins. Remove to a bowl or plate.
Cook egg, slice & remove to bowl or plate.
Bring slow cooker or pan back to sear temperature & add 3 tablespoon butter.
Add the rice & cook stir constantly until golden in colour. (If using a pan the following can be added straight to the slow cooker) Add stock & all the ingredients except the spring onions. Stir through. Wrap the lid in a tea towel and cook on LOW for 2-3 hours or until rice is just cooked. Just before serving fold through spring onions.
Serve as a meal or as a side.
