SLOW COOKER THAI CHICKEN RECIPE For once, I managed to please everyone with dinner.
Ingredients:
¾ cup hot salsa
¼ cup crunchy peanut butter
¾ cup coconut milk
3 TBS lime juice
1 TBS soy sauce
1 tsp white sugar
2 TBS ginger paste
1kg chicken thigh fillets, diced
Method:
Combine the salsa, peanut butter, coconut milk, lime juice, soy sauce, sugar and ginger in a jug. Place chicken in the slow cooker and pour sauce ingredients over it.
Cook on low until sauce has thickened and chicken is tender…approximately 6 hours.
Serve with rice and garnish with coriander.

Caramel and coffee fudge
Ingredients:
600g white choc
1x 395g can condensed milk
1 1/2 bags jersey caramels
1/4 cup of strong coffee
Directions:
Place all ingredients into slow cooker set to low. Cook without a lid for 90 mins, stirring every 15 mins. Pour into a lined tray and refrigerate until set.
